Have you ever considered making your own backpacking meals but don’t own a dehydrator? This is a quick and easy recipe which doesn’t require any dehydrating of your own as you can use ingredients from your local grocery store.

Ingredients
In one bag:
- 1 cup dehydrated Veggie mix (Look in the bulk section for a mix)
- 1 vegetable bouillon cube
- ½ teaspoon brown sugar
- ½ teaspoon ground ginger
- ¼ teaspoon garlic powder
- ¼ teaspoon sea salt
- 2 soya sauce packets
In a second bag:
- 1 cup instant rice
In a third bag- Optional:
- ¼ cup dehydrated eggs or Protein of your choice

Directions
At camp, if you have chosen to use eggs, cook your eggs first following the packages instructions. Place the cookpot on your stove over medium-low heat and scramble, stirring frequently so the egg doesn’t stick to the bottom. Once cooked, remove and set aside. We opted not to use egg and use bacon bits instead, so we skipped this step and just added the bacon bits at the end.
Add 1 ¼ cup water, soya sauce packets and the contents of the veggies and spice bag to the pot. Bring to a boil, then reduce the heat and simmer until the veggies are soft—about 5 minutes.
Add instant rice, stir, and remove the pot from the heat and cover. Let sit for 5 minutes.
Return the egg to the pot and stir to combine and re-warm the eggs

Be creative! We brought some ready cooked bacon with us to add to our meal for additional flavour and protein. If you have some dehydrated chicken you could definitely add some in to this recipe as well. With so many options we don’t think you will ever get sick of this recipe for your backcountry adventures.
